For this recipe you will only need a couple of ingredients, like 1 whole rabbit, a nice mirepoix with shallot, some bacon and spices.

Start by rendering the fat from the bacon, then searing the rabbit, then the veggies, then everything together in some of that bacon grease roux.

Braise it all in a mix of white wine and stock until the meat starts to fall of the bone, then remove the bones and heat it up some more.

Serve the rabbit ragu with some pasta, rice, polenta or mashed potatoes. Grate some parmegiano on top and add a slice of crusty bread.
