Baileys skillet brownie

A fudgy chocolate brownie with Baileys irish cream, served hot with vanilla ice cream

Ingredients
  

  • 100 g butter
  • 50 g chocolate chips
  • 200 g sugar
  • 75 g cocoa
  • 1 tsp vanilla
  • 3 whole eggs
  • 120 ml Baileys
  • 85 g flour

Instructions
 

  • Preheat your oven to 160°C
  • Place the butter, cocoa, and sugar in a bowl and place the bowl over a steaming/boiling pot
  • Let it melt until most of the sugar is soft and the rest is liquid, remove from the double boiler
  • Stir in the Baileys and the dry ingredients
  • Add the eggs and mix with a hand mixer until smooth
  • Pour the batter in a small skillet that has been seasoned well or just butter it
  • Place in the oven and cook for 30-35 minutes
  • Remove from the oven and let the brownie sink and take its final form for about 5 minutes
  • Serve with vanilla ice cream and enjoy while still hot!
