Blueberry crumble pie with fresh basil

Ingredients
  

  • 150 g cold butter
  • 200 g flour
  • ½ tsp salt
  • 1 tsp vanilla extract
  • 200 g soft brown sugar
  • 500 g blueberries
  • 1 tbsp honey
  • Fresh basil
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • Ice cream for serving

Instructions
 

  • In a bowl mix the blueberries with cut-up fresh basil, lemon juice, honey, and cornstarch
  • In another bowl mix the rest of the ingredients softly, do not overwork the butter
  • Preheat your oven to 180
  • In a baking dish or pie pan add half of the crumble / streusel dough mix
  • Using a bottom of a glass, flatten and press it together
  • Add the blueberry mixture
  • Scatter the rest of the streusel on top
  • Place the pie in the oven and bake for 50 minutes
  • Serve warm with ice cream and a drizzle of honey

Notes

The butter has to be cold in order to get that airy, crunchy caramelization.
