Imagine if you could skip all the hassle of making family classics or celebratory Easter dishes, and instead make an Easter brunch board which can be made smaller or bigger depending on the number of eaters. This year it is just me, the husband, and our dog, so why make 85 kinds of salads, his favorite, my favorite, the dogs favorite, sides, eggs in many ways, sandwiches, canapes, and whatnot. Instead, make your own bagel board for ease of access.
This bagel grazing board is suitable for 4 adults or less if you are willing to eat it the whole day. It is super customizable and can be suited to anyone’s taste. That being said, there are some things to include in an Easter brunch board.
How to make a bagel board?
• Bagels or any kind of bread that you can smother with toppings;
• Lox cured salmon, cured or salted fish of your choice;
• Fresh vegetables;
• Cream cheese;
• Pickled or fresh onions;
• Eggs at least one way;
• Cured meats like prosciutto, ham, salami;
• Dill, green onions, or other herbs.
While my bagel brunch board ideas may have been crushed due to the fact that for the love of myself I could not find even frozen bagels anywhere. I decided to quickly make my own. I followed like 5 different recipes and at the end used all-purpose flour which was not suggested and also forgot to buy malt syrup so in the end, I would say that the whole bagel thing was working out beautifully until I baked them for too long. Which is something I realized later.
While I love my bread to be golden brown, for this lox bagel board I should’ve stopped the whole process once they were just lightly golden. But hey, this is not a bagel recipe. So let’s pretend they are fine and focus on other things, mm-kay?
Easter grazing tables and a brunch charcuterie board seem like the way to go. I am all for many choices and piling your plate with plenty of stuff so it seems that putting it all in a beautiful formation that takes up the whole table is perfect. While the bagels can easily be swapped out for dinner rolls, sourdough slices, and soft fluffy sandwich bread, I decided to stick to my overbaked bagels. Easter brunch board
Ingredients
- 8 bagels
- Cream cheese
- Radishes
- Cucumbers
- Romaine lettuce leaves
- Pickled red onions
- Hard-boiled or colored Easter eggs
- Cherry tomatoes
- Avocados
- Prosciutto
- Gravlax, lox, or other salmon or fish
Instructions
- Halve your veggies, slice the avocados, slice the bagels
- Organize everything on a large board or a table
- Enjoy with a mimosa
