Lately I’ve been on a meatball frenzy. It is simply the best way to serve ground meat of any kind and you can do so much with them! Today I have made these Greek style turkey meatballs with a secret inside – fried shallots. Lovely marinated tomatoes from the garden and some lemony & sweet whipped feta. All that in a hot pita pocket or just wrapped inside and lunch/dinner is served!
This is one of those recipes that could be served family style straight from the pan. It would be the center piece of a party for sure! I am also pretty sure that one should be in a garden or at least the bath tub to eat these. Same as for tacos, with a feta clown nose and lemony brine running down your hands and elbows in to your sweater or blouse, you start questioning your life choices. But in the end, the messiest foods are always the ones that make you feel the best.
It may seem complicated because of the long name of the recipe, but these Greek style turkey meatball pitas with marinated tomatoes and whipped feta are actually super easy because each element is just thrown together and then everything is served in a warm pita bread.
Greek style turkey meatballs with marinated tomatoes and whipped feta
Equipment
- Food processor
Ingredients
For the meatballs
- 500 g ground turkey
- 1 egg
- 2 tbsp flour
- 2 shallots
- 1 tsp salt
- 2 cloves of garlic
- 1 tsp freshly ground pepper
- 1 tsp paprika
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tbsp butter
For the marinated tomatoes
- handful basil chopped
- handful mint chopped
- 1 tsp salt
- 1 tsp sugar
- Juice of ½ a lemon
- 2 tbsp olive oil
- Bunch of summer tomatoes diced
For the whipped feta
- 250 g feta
- 1 tsp honey
- Lemon zest
- 2 tbsp lemon juice
- 3 tbsp olive oil
Instructions
- Preheat your oven to 200°C
To make the marinated tomatoes
- Slice up your tomatoes
- Mix the marinade in a bowl and toss with the tomatoes
- Refrigerate until everything else is ready
To make the Greek style turkey meatballs
- Fry your shallots in the butter in a skillet until golden, during halfway add the garlic
- Mix the rest of the ingredients in a bowl, then add the fried shallot and garlic mix
- Using an ice cream spoon, scoop thee mixture in even portions and place on a parchment lined pan
- Roll them into more uniform balls, but you can leave them as they are if you wish
- Place thin lemon slices between the meatballs before putting them in the oven
- Bake for 10 minutes then flip and bake for 10 more
To make the whipped feta
- Add all the ingredients for the feta in your food processor and pulse together
- Scoop in a serving bowl
To make the Greek style meatball pita with marinated tomatoes and whipped feta
- In the oven warm a couple of pita pockets until they start to bloat
- Slather them with the whipped feta
- Top with the tomatoes and the meatballs
