I needed some time to think about what I could make on Mother’s Day. Something sweet? Something savory? Pancakes? Bagels? Mimosas? When I finally landed on the perfect thing. Baileys skillet brownie. It is a boozy chocolate dessert served hot with melting vanilla ice cream on top. Sure, I made this in advance and tested the recipe a bit so my mum probably won’t be getting this on Sunday, but your’s will!
You all may remember my Whipped Irish cream coffee with Baileys that I made for St Patrick’s day. And the ongoing story of Baileys 6 years past its expiration date. Well, this one’s time ran out about a month ago. So I had to think of somewhere where I can get rid of all these liquours. Brownies with Baileys seemed like the ultimate treat.
How to make Baileys Irish cream brownies?
There is one thing that makes everything better in life, and that is butter. And the ultimate brownie recipe will always have butter in it. Molten chocolate is another important thing and so is cocoa.
Another thing that makes all kinds of pastries, desserts, and cakes come to life, are eggs. I had a special delivery from my grandmother, she sent me two dozen eggs from her hens. So I got white ones, brown ones and even the green eggs everyone is raving about. And even though it is just spring and not as green and luscious as in summer, the yolks are already incredibly yellow. Some even orange.
Once the butter has been melted with the chocolate chunks and sugar, it is time to add all the other ingredients. Yes, Baileys too. I have been having some trouble with sugar lately, and different brands of sugar. It just doesn’t melt. Becomes sticky and sinks to the bottom of the double boiler. I believe there have been some changes in the ingredients in sugar itself. If that makes sense. This is sad because our own sugarbeet sugar has always been the best there is. No baileys brownies recipe will work without sugar, but it doesn’t really matter that the sugar doesn’t melt completely. It will all work out in the end.
Now for ease of serving I made this in a skillet. These 8 inch cast iron skillet brownies are a real treat. If your pan is seasoned properly, you will only have to pour some warm water on and wipe it after the brownies. Because they will actually come off pretty easily. You can, of course, use any other pan you would like. But it is really nice to just serve the whole skillet in the middle of a table with some ice cream and everyone can just grab a spoon.
I can’t even believe that it is almost summer. I mean, I don’t even really have a spring feeling because here it is winter winter winter winter and then boom, start wearing shorts. Because even now I am going outside in my winter coat. Because it is cold and raining. And next week it will be sunny and warm.
Make this brownie to celebrate the long winter of sitting at home and not socializing and having some seasonal depression. Let’s have some cake to celebrate the arrival of spring.
These fudgy skillet brownies are super easy to make. Just melt, mix, pour, bake, eat. It really doesn’t get any simpler than that. This might just be the ultimate Mother’s day breakfast recipe. You can also make it on any other evening or for a morning brunch. Imagine having this dessert while still in bed. Sounds fantastic to me. Don’t forget to have a small glass of Baileys on the side.
When you grow up and don’t yet have any kids of your own, the meaning of Mother’s day gets lost somewhere. And with the current situation of the world when we shouldn’t really celebrate that much, even a lovely phone call or some flowers would work really well. Even an SMS greeting. The most important thing is not to forget this day. And this baileys chocolate brownie recipe can also be made in advance, not baked entirely through, and then reheated in the oven. So, you know you can make it, bring it to your mum and serve. A lovely surprise that would be!
Baileys skillet brownie
Ingredients
- 100 g butter
- 50 g chocolate chips
- 200 g sugar
- 75 g cocoa
- 1 tsp vanilla
- 3 whole eggs
- 120 ml Baileys
- 85 g flour
Instructions
- Preheat your oven to 160°C
- Place the butter, cocoa, and sugar in a bowl and place the bowl over a steaming/boiling pot
- Let it melt until most of the sugar is soft and the rest is liquid, remove from the double boiler
- Stir in the Baileys and the dry ingredients
- Add the eggs and mix with a hand mixer until smooth
- Pour the batter in a small skillet that has been seasoned well or just butter it
- Place in the oven and cook for 30-35 minutes
- Remove from the oven and let the brownie sink and take its final form for about 5 minutes
- Serve with vanilla ice cream and enjoy while still hot!
