Ingredients
This is a really simple recipe that does not call for too many ingredients. To make this blueberry pie with crumble top, you will need:
- Fresh blueberries, small ones or bush ones, either one will work really well
- Soft brown sugar will give this recipe that caramelized molasses taste
- Fresh basil, will give another level of freshness
- Flour
- Butter
- Honey and lemon juice, to make the flavors really pop
To make this recipe, you will have to follow a few simple steps.
Instructions
The key to making this blueberry streusel pie is to use fresh season blueberries. While substitutions are possible, the fresh berries taste caramelized and jammie after baking.
Firstly you will have to make the streusel / crumble dough. Which consist of flour, butter, and sugar. Similar to puff pastry, the bottom of the blueberry crumb pie is made by flattening the streusel into a uniform dough.
After that, you add the blueberries that have been mixed with honey, lemon juice, fresh basil, and cornstarch.
After the blueberries have been laid in the baking dish, the blueberry crumble pie is topped with streusel topping. The key is to scatter it over all of the berries because the whole pie will bake and the berries will release their moisture. And also, the streusel is the best part. At least for me.
Nothing quite else in this world is as good as the baked and caramelized bits of buttery crumbs.
Substitutions
Vegan – substitute the butter for margarine and honey for agave syrup
Blueberries – substitute for fresh gooseberries, currants, or even raspberries and blackberries
Variations
Other herbs – try using lemon thyme for an interesting approach or fresh mint for a foolproof flavor combo
Serving – bake on a rectangular sheet in a slightly thinner consistency and cut into pie bars
Sugar – you can use white or caster sugar for this pie
Top tips
The most important thing to remember when making this blueberry crumble pie recipe is to use cold, cubed butter. Just like the incredible buttery pockets of great puff pastry, the lightness of the crumbs comes from using cold butter.
The crumb topping for blueberry pie or any berry pie really is the best part. By using soft brown sugar, it gets a whole new depth of flavor that white sugar cannot achieve.
