I believe that the trick to buying the perfect pomelo is similar to all those viral videos of dad’s choosing watermelons. You knock and ask whether it is ready and somehow you know. Well, you can knock on a pomelo, you can try looking at its 5 cm thick skin but there is a small chance that you will buy a perfectly ripe pomelo in the supermarket. This pomelo collins is a simple play on the Tom Collins and really doesn’t call for too many ingredients. And there are health benefits to this cocktail as well! Just kidding, but the pomelo itself is good for you.
While the pomelo has this slight bitterness in its taste. More visible to some than the others. I am all for bitter-tasting spirits and fruit. Let me just tell you, that even after carefully looking at all the pomelos, I did not choose the best one. Or maybe I did and none of them were really ripe. But then you tear it apart and decide that it is good enough to go into a cocktail. I mean, if you throw something in a blender or a food processor, it will fall apart and release its juices. This Pomelo Collins is a super basic cocktail, once you take out the 30 minutes you will spend trying to juice the beast and then strain the juice.
So, as many of you may know. There are several kinds of pomelos. This was a white one. With a light yellow peel and flesh. But since this is an extremely easy cocktail to make, a super-fast way to get some nice drinks on the table on a Friday night, any citrus would do the trick. But since we are adding the lime juice, you may have to adjust the acidity and sweetness with different citrus.
