The vodka brings the sauce together and makes it one of my favorite comfort food recipes. This oven roasted butternut squash alla vodka pasta has so much flavor and is super creamy. This recipe will definitely get a thumbs up from anyone you will be serving. Dining alone? No problem, tastes even better straight from the pan with the big salad spoon. Trust me, I tried it out cold from the pan after getting home from work somewhere around midnight.
This oven roasted butternut squash alla vodka pasta gets most of it’s flavor from oven roasted squash and roasted garlic. The real secret is the breadcrumbs scattered over the pasta. You can absolutely skip those, but I would not suggest that. Because everyone has a few slices of stale baguette or bread lying around somewhere in the kitchen. And these garlic breadcrumbs are perfect for this. And not to mention the zero waste aspect of it all.

Of course you can use store bought pumpkin puree and skip all the wonderful flavors that are on this pan right here. Today was a Spaghetti kinda day. Boiled pasta is tossed with the sauce, placed on the plate or in a bowl and then generously sprinkled with garlic breadcrumbs. I could stuff my face with this beautiful noodle concoction any given day.
