Why is it that when the heat stops, it is nice for a week and then it starts to rain and is so cold during the night that you start thinking about starting to wear pants again? I mean, PANTS. How crazy is that? But it is nice to finally have something nice and warm and cozy. Ramen is the ultimate cozy day dish. This spicy chicken ramen noodle soup has it all, ground chicken meatball, curry ramen noodles, and a creamy coconut broth.
To make this curry ramen you will need veggie or chicken broth, it can be homemade or store-bought. To this broth, you will add coconut milk and red curry paste. This will tie the whole soup together.
For the ultimate flavor bomb, we will have some spicy chicken meatballs. So this is basically a chicken meatball soup just elevated. It has all the best Asian flavors, like sesame oil, chili paste, curry, soy, and spring onions. The trick is to bake the meatballs, I opted for stovetop, but you can do it in the oven too. This will make them crispy.
The next thing to add to these chilli chicken ramen bowls is caramelized mushrooms. These are simple cremini mushrooms roasted in some sesame or olive oil and then caramelized with a splash of soy.
Another important ingredient is the noodles. You can choose whatever kind you like, I decided to buy fresh ramen noodles for this spicy chicken ramen noodle soup. They were chewy and bouncy and so good with the broth.
I am pretty sure that every time the weather gets below a certain number, it is soup season. And pasta season, and noodle season. So this meal is certainly on point. There are hundreds of curry noodle recipes on the web and most of them will rock your socks off. Different recipes for different tastes eh? This broth will not really be all that spicy but it still has the warmth and a little bit of a kick from both the Korean red chili paste and the red curry.
I am truly happy to return to making these rainy and cold-weather dishes. This spicy chicken ramen soup is weekday comfort food at its best. Doesn’t take much time to put together, but is packed with flavor.
I added some Thai basil for another level of flavor. You can add regular basil, but once you trie its sister plant, you will realize they taste completely different. Thai basil has an anise kind of flavor and is much sharper than Italian basil.

Spicy chicken ramen noodle soup
Ingredients
Meatballs
- 500 g ground chicken
- 1 egg
- 1 tsp gochujang paste
- 1 tsp salt
- ½ tsp white pepper
- 2 cloves garlic
- 2 tbsp flour
- 2 tbsp soy sauce
Curry ramen noodle soup
- 1 carrot thinly sliced
- 3 spring onions thinly sliced
- 200 g cremini mushrooms
- 300 g fresh ramen noodles
- 750 ml veggie broth
- 200 ml coconut milk
- 1 tbsp red curry paste
- 2 tbsp soy sauce for mushrooms
- Thai basil for serving
- Sesame seeds for serving
Instructions
- In a bowl mix the meat, egg, gochujang, salt, pepper, garlic, soy sauce, and flour
- Make meatballs using a cookie scooper or 2 spoons and roll until even
- Heat some oil in a pan and cook the meatballs for about 4 minutes, while turning
- Remove from the pan and add some sesame oil
- Caramelize the mushrooms for 5 minutes
- Add soy sauce and cook for 1 more minute
- In the meantime cook the noodles according to package instructions
- In a pot heat the broth with coconut milk and curry paste
- Add in the meatballs
- Simmer for 3 minutes
- Serve the hot broth with noodles, spicy chicken meatballs, caramelized mushrooms, carrot and spring onions
- Sprinkle with some sesame seeds, add a bunch of fresh Thai basil and enjoy
