With summer in full bloom and the weather oh so hot, sometimes you have to hit two birds with one stone. While making my granola I realized that this whole concept can be made into popsicles. Strawberry popsicles with granola are a cross between breakfast and dessert. Truly the best way to enjoy the last of summer strawberries. Mixed with Greek yogurt and sweetened condensed milk this is the easiest strawberry popsicles recipe.
There are just a few ingredients and the end result is foolproof. You can even skip the granola and simply make these greek yogurt popsicles with strawberries and add lemon zest for some tang. They are quick and easy to make, and the rest of the job is done by your freezer. For the molds, I have used actual molds and small paper cups. You can use silicone muffin molds and any other ones really. Just something that you can stick a wooden stick into and eat afterward. So I wouldn’t go overboard with the size of the cups.
The recipe for strawberry popsicles is super easy. You can use sweetened condensed milk to lower the fat content of these but I like to make my snacks indulgent. I really do have 2 ice-creams a week so they may as well be sweet and full of fatty cream. This time I actually used greek yogurt so not as bad. Definitely tastier. These strawberry and greek yogurt popsicles are a favorite in this house, and I even sneak a taste for my dog. The amount of sugar is definitely a no-no for dogs, but the last little piece of frozen strawberry is absolutely fine.
How to make strawberry pops?
All you need are frozen and fresh strawberries, sweetened condensed milk, and greek yogurt. For extra crunchiness, I added granola but you can add crushed cookies or just nuts. The liquid ingredients are mixed with the help of a good blender or food processor and the rest is simply folded in. I like to add the granola in the molds and paper cups themselves but you can also fold in the granola with the rest of the ingredients.
This strawberry yogurt popsicle can be switched up and made with any other berries or fruit. You can also add different berries to make things even more interesting. But this is the easiest strawberry popsicles recipe. So let’s just keep things simple and fast and have one or two of these for breakfast. In this heat, it is so hard to cook anything. The oven is absolutely off-limits and even the stovetop radiates so much heat that it is unbearable.
To make these better, you can add homemade granola instead of store-bought. Which is absolutely fine as well. If you are feeling inspired, try making my raspberry granola with chocolate. Ironic actually, since I was planning on cooking this summer away and producing a lot of summery and green and fun content for early fall when a large part of the world will still have the already gone product. With all the hiding from the heat and simply trying to survive and keep the dog alive in an apartment, we have missed sour cherry season. Which almost makes me cry, but you can’t get everything, can you.
Half of the summer has officially gone by and the nights are starting to cool off and it is getting dark earlier and I believe that I will love the fall just like last year even more because I am working from home almost exclusively. But more on that in a month or two.
Strawberry popsicles with granola
Ingredients
- 400 g frozen strawberries
- 300 g condensed sweetened milk
- 250 g greek yogurt
- 150 g fresh strawberries
- Granola
Instructions
- In a food processor or a powerful blender add the frozen strawberries and sweetened condensed milk
- Blitz until somewhat smooth
- Mix in the greek yogurt and fresh strawberries
- At the bottom of each popsicle mold, throw in a teaspoon or two of granola
- Pour in the strawberry liquid, add more granola and finish with the liquid
- Freeze at least 8 hours before serving
