Fun cooking project alert! What could be more fun than homemade dumplings? They are literally little pockets of flavor and joy. These vegetarian tofu potstickers with spicy pumpkin chutney are OH SO GOOD. There is carrot, cauliflower, kale, scallions and garlic, and most importantly, tofu in the mix. And did I say that these come with a spicy butternut squash dipping sauce / chutney kind of situation?
What is better than a plate of steamy, crispy bottomed dumplings? A spicy sesame and butternut squash chutney to dip them in to! These are very similar to Nepali / Tibetan momos which are a vegetable forward dumpling with a little opening at the top just like these have. Of course, we have talked about the different kinds of dumplings and their names. In the end, they are all dumplings. So why call these potstickers? Because they have crispy fried bottoms, they stick to the pot. That is what makes them my favorite kind of dumpling. Crispy, brown, crunchy bottom and steamed, soft dough with a filling that is steamy hot and delicious.
These vegetarian tofu potstickers with spicy pumpkin chutney are filled with a delicious mixture of all the best autumn veggies and a healthy dose of sesame oil and Chinese rice vinegar. And you know what is my favorite ingredient of all time and one that I add to EVERYTHING? GARLIC. Garlic is truly the queen of cooking.
To make these potstickers a relatively easy project, I used store bought dumpling wrappers. I am a sucker for fluffy homemade dumpling dough, but the store bought gyoza wrappers like these ensure that all of your potstickers are the same size.
