Cheesy baked chicken tacos

These cheesy baked chicken tacos are fast and easy to make and perfect for quick lunch or Taco Tuesday.

Ingredients
  

  • Corn tortillas
  • 400 g shredded chicken
  • ½ tsp oregano
  • ½ tsp paprika
  • 1/ tsp garlic powder
  • ½ tsp coriander
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp sugar
  • 1 tbsp chipotle paste
  • 400 g canned tomatoes
  • 250 g grated white cheddar
  • 2 tbsp greek yogurt or sour cream
  • Pickled onions for serving

Instructions
 

  • In a skillet, add the chicken, spices, tomatoes, and greek yogurt, mix
  • Heat for 5 minutes, while stirring until it comes together
  • Add in the grated cheese, mix in and remove from heat
  • Add about 3-4 tbsp of filling in each tortilla, fold it, and place on a sheet pan
  • Spray with olive oil or cooking spray
  • Bake at 200C for 5 min each side
  • Turn on the broiler for some extra crispiness
  • Serve with sour cream, avocados, and pickled onions

Notes

You can switch up the sour cream with greek yogurt or some lighter plant based yogurt instead.
