Crispy pork & vermicelli spring rolls

Ingredients
  

  • 250 g minced pork
  • 2 carrots chopped
  • 100 g green cabbage chopped
  • 100 g vermicelli noodles
  • 3 cloves garlic chopped
  • 2 tbsp soy sauce
  • 1 tbsp sweet chili sauce
  • ½ cup spring onions chopped
  • a handful fresh coriander

Instructions
 

To make the pork spring rolls

  • Get your ingredients together and thaw your spring roll wrappers
  • Start by soaking your vermicelli in hot water until they are cooked trough. Strain them
  • In a pan fry the pork with the garlic and soy sauce for about 5 minutes
  • In a bowl mix all the ingredients together
  • Now take a wrapper and place it on a cutting board
  • Place the filling in the middle and fold your preferred way
  • Slightly wet the wrapper to seal it more easily
  • In a deep skillet heat enough oil so it's at least 1 cm deep
  • Put your spring rolls in and fry them for about a minute from each side
  • Lay them on a paper towel before serving
  • Serve with more of the fresh coriander, spring onions and some diced chilies
