Get your ingredients together and thaw your spring roll wrappers
Start by soaking your vermicelli in hot water until they are cooked trough. Strain them
In a pan fry the pork with the garlic and soy sauce for about 5 minutes
In a bowl mix all the ingredients together
Now take a wrapper and place it on a cutting board
Place the filling in the middle and fold your preferred way
Slightly wet the wrapper to seal it more easily
In a deep skillet heat enough oil so it's at least 1 cm deep
Put your spring rolls in and fry them for about a minute from each side
Lay them on a paper towel before serving
Serve with more of the fresh coriander, spring onions and some diced chilies
