Easy peanut sauce noodles

This cold easy peanut sauce noodles recipe is perfect for hot weather and packed with flavor. Topped with garlic cucumbers for a refreshing finish.

Ingredients
  

  • 200-250 g dried noodles of any kind
  • 1 tbsp tahini
  • 3 tbsp peanut butter
  • 4 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp gochujang or other chili paste
  • 100 ml pasta water

Quick salted garlic cucumbers

  • 3 cucumbers
  • 1 garlic clove
  • 1 tbsp olive or sesame oil
  • 1 tbsp rice vinegar
  • ½ tsp salt
  • 2 sliced green onions
  • Chopped cilantro
  • Chopped peppermint

Instructions
 

  • Boil the noodles according to package instructions, then drain (reserve some pasta water) and run under cold water to stop the cooking process
  • In a bowl mix the wet ingredients with a whisk until smooth
  • Add in the noodles
  • Mix it all together
  • In a different bowl mix all the ingredients for the garlic cucumbers
  • Ideally you would let these sit in the fridge for 10 minutes before eating, but they are good to go
  • Serve it all together
  • Sprinkle some sesame seeds or chopped peanuts on top

Notes

This recipe is super versatile and you can add to the sauce anything else you would like.
