Easy rhubarb crumble bars

These easy rhubarb crumble bars are the perfect summer time dessert that is tangy, tart and sweet at the same time

Crumble
- 250 g cold butter
- 300 g flour
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- 250 g sugar
Rhubarb filling
- 50 g sugar
- 5 stalks of rhubarb diced
- 1 tablespoon lemon juice
- 2 tablespoons cornstarch
Preheat your oven to 190°C
Mix the rhubarb with the lemon juice, cornstarch and 50g of sugar
In a separate bowl combine all the other ingredients and mush together with your hands to make the crumbs
Line a pan with some parchment paper and place ½ of the crumb mixture in there
Using the bottom of a glass or a ramekin, press together
Drain the rhubarb and place in the pan
Top with the rest of the crumbs
Place in the oven and cook for 55 minutes
Remove and let cool completely before serving
