Easy rhubarb crumble bars

These easy rhubarb crumble bars are the perfect summer time dessert that is tangy, tart and sweet at the same time

Ingredients
  

Crumble

  • 250 g cold butter
  • 300 g flour
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 250 g sugar

Rhubarb filling

  • 50 g sugar
  • 5 stalks of rhubarb diced
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch

Instructions
 

  • Preheat your oven to 190°C
  • Mix the rhubarb with the lemon juice, cornstarch and 50g of sugar
  • In a separate bowl combine all the other ingredients and mush together with your hands to make the crumbs
  • Line a pan with some parchment paper and place ½ of the crumb mixture in there
  • Using the bottom of a glass or a ramekin, press together
  • Drain the rhubarb and place in the pan
  • Top with the rest of the crumbs
  • Place in the oven and cook for 55 minutes
  • Remove and let cool completely before serving
