Orzo Caprese pasta salad

This caprese pasta salad with pesto is the ultimate side for some easy summer grilling or eaten as it is as quick and easy lunch.

Ingredients
  

  • 250 g dry orzo
  • 2 fresh mozzarellas about 250g
  • 400 g cherry tomatoes
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp sugar
  • Sprinkle of chili flakes
  • 1 tbsp extra virgin olive oil
  • 3 tbsp pesto
  • 2 tbsp balsamico
  • Fresh herbs for serving
  • Fresh strawberries for serving

Instructions
 

  • Cook the orzo for 8 minutes, drain and rinse with cold water to stop the cooking
  • Toss with olive oil once cooled
  • Heat a skillet with some olive oil and throw on the tomatoes
  • Let them blister all up, cooking for about 1-2 minutes, remove the skillet from heat and let them cool a bit
  • Toss with the spices and let come to room temperature
  • Choose a large serving plate and smear it with the pesto
  • Throw the orzo on the pesto
  • Top with torn pieces of mozzarella, add the tomatoes
  • Top with fresh strawberries and fresh herbs
  • To finish, drizzle with balsamico

Notes

Alternatively, this can be thrown together in a large bowl and mixed and served.
