Orzo Caprese pasta salad

This caprese pasta salad with pesto is the ultimate side for some easy summer grilling or eaten as it is as quick and easy lunch.

Ingredients
250
g
dry orzo
2
fresh mozzarellas
about 250g
400
g
cherry tomatoes
1
tsp
paprika
1
tsp
salt
1
tsp
sugar
Sprinkle
of chili flakes

tbsp
extra virgin olive oil
3
tbsp
pesto
2
tbsp
balsamico
Fresh herbs for serving
Fresh strawberries for serving
Instructions
Cook the orzo for 8 minutes, drain and rinse with cold water to stop the cooking
Toss with olive oil once cooled
Heat a skillet with some olive oil and throw on the tomatoes
Let them blister all up, cooking for about 1-2 minutes, remove the skillet from heat and let them cool a bit
Toss with the spices and let come to room temperature
Choose a large serving plate and smear it with the pesto
Throw the orzo on the pesto
Top with torn pieces of mozzarella, add the tomatoes
Top with fresh strawberries and fresh herbs
To finish, drizzle with balsamico
Notes
Alternatively, this can be thrown together in a large bowl and mixed and served.
