Pork meatball and kale white bean soup

Ingredients
  

For the pork meatballs

  • 500 g minced pork
  • 1 tsp english mustard
  • 1 egg
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp sugar
  • ½ tsp dried oregano
  • 1 tbsp flour

For the soup

  • 1 can white beans drained
  • 1 large onion
  • 1 large carrot
  • 1 cloves garlic
  • 3-5 kale leaves
  • 2 tbsp butter
  • 1 tbsp flour
  • 1,5 l water
  • 1 tsp salt

Instructions
 

  • Make the meatballs by combining all the needed ingredients
  • Roll them into balls roughly the same size
  • Heat your pot with oil and bake the meatballs in batches until brown for 2 minutes. Remove from the pot
  • Add the butter to the pot and the chopped onion, carrot and kale stalks
  • Brown for 5 minutes then ad garlic and brown for 1 minute more
  • Add the flour, stir, then add the water
  • Bring to a boil, then add the meatballs. Turn to a low and let simmer under the lid for 15 minutes
  • Add the beans and the kale, remove from heat and put the lid back on. Let sit for 10 minutes
  • Meanwhile slice some baguette and grill in the oven
  • Rub with the garlic and serve with soup
