Are you a spring roll lover just like me? I used to order spring rolls every time I would go out and 9/10 times they would all be from the same frozen food isle and would taste the same – sad. There are wonderful frozen ones, for sure, but they are not so popular where I live, so the cheap ones with barely any filling are served with beer and other drinks one might fancy.
But this is a story on how to make your own. Crispy, chewy pork & vermicelli glass noodle spring rolls and never look back at the store bought!
It is so simple to make your own spring rolls. All you need is a package of frozen spring roll wrappers, any size and any form, round ones or rectangular are the most common. Et voila! Mix and match your favourite fillings and wrap them in the wrappers and fry. You are done!
Put your feet up and enjoy them with a nice tall glass of cold beer or other beverage of your choice. The perfect snack for any day!
Crispy pork & vermicelli spring rolls
Ingredients
- 250 g minced pork
- 2 carrots chopped
- 100 g green cabbage chopped
- 100 g vermicelli noodles
- 3 cloves garlic chopped
- 2 tbsp soy sauce
- 1 tbsp sweet chili sauce
- ½ cup spring onions chopped
- a handful fresh coriander
Instructions
To make the pork spring rolls
- Get your ingredients together and thaw your spring roll wrappers
- Start by soaking your vermicelli in hot water until they are cooked trough. Strain them
- In a pan fry the pork with the garlic and soy sauce for about 5 minutes
- In a bowl mix all the ingredients together
- Now take a wrapper and place it on a cutting board
- Place the filling in the middle and fold your preferred way
- Slightly wet the wrapper to seal it more easily
- In a deep skillet heat enough oil so it's at least 1 cm deep
- Put your spring rolls in and fry them for about a minute from each side
- Lay them on a paper towel before serving
- Serve with more of the fresh coriander, spring onions and some diced chilies
