Got those burger cravings? Dreaming of a summer grill-out?
Don’t worry, we got you covered. In general, I am not a huge burger fan. Mostly because I am usually disappointed by the bread. To make the best possible burgers for my own restaurant we did some bun research. Finally landed on a locally made bread. The company itself originates in Finland, but they have a branch here in Latvia and everything is baked here. These are really the best burger buns I have ever tried. They are made from buttery brioche dough, which goes perfectly with these Greek turkey burgers and whipped feta.
A good burger patty is very important
Usually, in wintertime, you would get offers for all these incredibly heavy and hearty burgers. Like double-decker pork or beef patties, stuffed with cheese, bacon, eggs, onion rings, and whatnot. I’ll be honest with you, I am not ready to eat my weight in burgers. Maybe sometime next spring. Today we are making these light and summery burgers. I feel that these Greek turkey burgers with whipped feta would go hand in hand with a warm summer night. None the less, let’s not assign seasons to food unless it’s gingerbread cookies. These turkey burger patties were made with some egg thrown into the mix, which you can easily skip, but I like it, it is such an old school method of binding ground meat. Then there are spices like oregano, basil, pepper, red pepper, garlic powder, and some sugar for good measure.
Whipped feta cheese with honey and extra virgin olive oil
I’ve made whipped feta before because it replaces both the cheese and a sauce in a meal. Just like in this burger, the super generous amount of the whipped feta has enough moisture for the burger to not need any more sauce. The other thing about the whipped feta is that it is a wonderful appetizer. If you would make regular or sweet potato fries with the burger, you would definitely be dipping them into this creamy and fluffy feta dip. It is wonderfully versatile. Like a homemade cream cheese. And you can add any spices and flavors to it, to make it uniquely yours. Don’t like burgers? Try some pita pockets instead!
Greek turkey burgers with whipped feta
Equipment
- Food processor or hand mixer
Ingredients
For the turkey burger patties
- 200 g ground turkey
- ½ tsp salt
- ½ tsp black pepper
- 1 tsp oregano
- ½ tsp garlic powder
- Sprinkle of red pepper flakes
- 1 tsp sugar
- 1 whole egg
- 3 tbsp flour or breadcrumbs
For the whipped feta
- 150 g feta cheese
- 1 tsp honey
- 3 tbsp olive oil extra virgin
For the burgers
- 1 tbsp butter
- Pickled red onions *
- 1 small cucumber
- 1 tomato
- Romaine or other lettuce
Instructions
- Make the burgers by mixing the ingredients and making them into 2 patties
- Freeze the patties for 20-30 minutes
- Make the whipped feta by placing the feta, olive oil and the honey in a food processor or using a hand mixer and whipping it until fluffy
- Butter the buns and toast in a pan until golden brown
- Bake the burger patties for about 5 minutes in total, remove pan from heat and place a lid on them and let steam trough for about 1-2 minutes before serving
- Generously smear the feta on both patties, add the tomato, patty, cucumber, onions and the other bun
