Turns out, Baileys does not go bad even after its “best by” date was in 2016. I knew I had these bottles somewhere and was confident that I also have the original Irish cream one, but turns out I only had double chocolate Baileys, I am not sure they even make one like that anymore. But it was just as good. I think any baileys would go wonderfully in this drink. This Irish cream whipped coffee is here just in time for St. Patrick’s day.
Now, usually on St. Patrick’s day, I would go out and have a Guinness with my husband. Because Guinness from the tap is better than anything. But, since all of the bars and restaurants are closed and NO ONE, and I mean when I say NO ONE is currently selling tap beer, except for a few beer stores but they usually carry their own lines of beer and other malt beverages. So, no Guinness for me this year. I could buy the can or the bottle, but I will not be able to draw the four-leaf clover in the foam, not even before I have had it. This Irish cream whipped coffee will have to make it work.
I am absolutely and completely native to my region of Europe. But I love celebrating other cultures and their celebrations. And you know, this is just an excuse to have a coffee cocktail in the middle of the day, so what better reason do you really need?

Irish cream whipped coffee
This Irish cream whipped coffee cocktail is perfect for brunch, St Patricks day or as an afternoon pick me up.
Equipment
- Hand mixer
Ingredients
- 2 tbsp instant coffee
- 2 tbsp cold water
- 2 tsp sugar
- 50 ml Baileys
Cream
- 50 ml heavy cream
- 1 tsp sugar
Instructions
- Whip the coffee with water and sugar until stiff peaks form
- Whip the heavy cream with sugar until soft but strong structure forms
- Add the cream at the bottom of a glass
- Add ice, pour over the Baileys
- Top with dollops of whipped coffee and enjoy

Feel free to add as much or as little Baileys as you wish. If you want to kick it up a notch, add a splash of whiskey too!
