It is that time of the year when one day you are freezing and keeping yourself warm with a steaming bowl of soup and the other Indian summer hits and all you’ll have for lunch is a popsicle. Don’t worry, as comforting as this pork meatball and kale, white bean soup is, you can enjoy it slowly on a hot day.
This comforting pork meatball and kale white bean soup starts with the basic ingredients that make any soup great. All my life I have made soups without using premade stocks. Just the roasted veggies and spices. In order for that to work, you have to choose the right spices and the right veggies so it all comes together wonderfully and with a lot of flavour.
The mane base for this soup’s incredible flavour are the pork meatballs. They are full of spices and fried in the pot before adding everything else. So the fat gives this soup that hearty feeling and taste.
It is the ultimate end of summer/ beginning of autumn soup. Not too heavy, not too fatsy, just right. Go ahead and make your own pork meatball and kale white bean soup.
Pork meatball and kale white bean soup
Ingredients
For the pork meatballs
- 500 g minced pork
- 1 tsp english mustard
- 1 egg
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp sugar
- ½ tsp dried oregano
- 1 tbsp flour
For the soup
- 1 can white beans drained
- 1 large onion
- 1 large carrot
- 1 cloves garlic
- 3-5 kale leaves
- 2 tbsp butter
- 1 tbsp flour
- 1,5 l water
- 1 tsp salt
Instructions
- Make the meatballs by combining all the needed ingredients
- Roll them into balls roughly the same size
- Heat your pot with oil and bake the meatballs in batches until brown for 2 minutes. Remove from the pot
- Add the butter to the pot and the chopped onion, carrot and kale stalks
- Brown for 5 minutes then ad garlic and brown for 1 minute more
- Add the flour, stir, then add the water
- Bring to a boil, then add the meatballs. Turn to a low and let simmer under the lid for 15 minutes
- Add the beans and the kale, remove from heat and put the lid back on. Let sit for 10 minutes
- Meanwhile slice some baguette and grill in the oven
- Rub with the garlic and serve with soup
