Here I am at the beginning of fall trying to get my groove back. Haha, but seriously, feeling really uninspired lately. I am guessing that it’s just a seasonal thing and will get better in, well, spring? For those of you who live in places with high contrast climate and no 3 kinds of weather, you will get me. There is no warm fall with dresses and sweaters and lattes. It is cold, muddy, raining, dark, and muggy all the time until the winter comes. Basically, the perfect weather for making cakes, pies, galettes, rolls, and all sorts of baked pastries. So, let’s make this rose apple galette with some ice cream on top.
How to make an apple galette?
First of all, you will need to make your galette shell or dough. It is a simple shortcrust pastry style dough, you can mix and match the ingredients to get the level of sweetness you wish for. Also, I could’ve added an egg here, which is optional.
The dough is then laid flat on parchment paper and filled with sugary apples. Folded over and baked. Serve with ice cream, cream or just eat as is.
A galette can be made with any ingredients, apple galette, peach galette, even tomato galette. It is the simplest way to enjoy what is in season. These rose apples came from my grandmother’s farm, where we have an orchard with about 50 old apple trees. Since they have become quite old in the last few years, the orchard is in pretty bad shape, but the apples are still wonderful. There are many different kinds and you can easily mix and match here, or just use what you find at the supermarket. Just taste the apple before adding sugar, so you don’t overdo it.
You can simply throw the apples on this rose apple galette before baking or layer them neatly as I did. There are no rules. The same goes for the edges of the dough, you could cut out a perfect circle and make it perfectly round, but that would lead to dough waste and we are not here for that. I would’ve made a pie if I wanted perfect edges and straight crust. Just make sure it is rolled out evenly so it bakes evenly.
Once you remove this rose apple galette from the oven, let it cool a bit, I’d say 10 minutes is enough if you wish to enjoy it with ice cream. It has the perfect crunchy texture
This rose apple galette with vanilla ice cream is a foolproof autumn dessert to make again and again. It is super easy to make and will quickly become everyone’s favorite. If you wish to spice things up, literally, add some cinnamon or cloves or any wintery spice to make it taste like Christmas and smell like it too.
Rose apple galette

- Food processor
Ingredients
- 120 g cold butter
- 140 g flour
- 50 g iced water
- 1 tsp sugar
- Pinch of salt
- 4-5 rose apples sliced
- 2 tbsp sugar
- 1 tsp vanilla extract
- 1 egg for brushing
- 1 tbsp brown sugar for dusting
Instructions
- Make the dough in a food processor by adding all the ingredients and slowly pouring in the cold water until a dough forms
- Roll the dough out between two sheets of parchment paper
- Let the dough cool in the fridge for at least 20 minutes
- Toss the sliced apples with sugar and vanilla
- Preheat your oven to 200C
- Arrange the apples on the dough, leaving at least 4 cm at the edges
- Fold the edges over
- Brush the galette with a beaten egg and sprinkle with brown sugar
- Bake for 50-60 minutes
- Serve with vanilla ice cream on top
