Sushi and pizza are one of those cravings that hit suddenly and always seem so hard to replicate. But once you realize that neither requires that many special ingredients, only time, it seems doable. These spicy salmon hand rolls are the perfect size to serve in a get-together or have for a nice romantic dinner over the kitchen counter. Because let’s be real, once you roll one of these bad boys, you won’t want to put it down but put it straight in your mouth instead.
Today we will be using salmon fillet. My local grocery store has a fantastic sale every month, 50% off the usual price and the quality is the same. To be honest, it is a supermarket quality. If you can lay your hands on a nice bread salmon or some wild trout, go ahead, but it would be a crime to add mayo to that kind of fish. For this, not so much. I like to buy the whole fillet, trim, cut, and eat in the course of 2-3 days. I used to buy and freeze it, but then I realized, that the times we eat fish in this house don’t change just because I have some in the freezer. So, fresh it is.
How to make spicy salmon for sushi?
To make these spicy salmon hand roll sushi you will have to make the spicy salmon first.
To a cubed salmon fillet we will add:
- Mayonnaise, I usually go for Hellmans, but any other will work too;
- Sriracha, it can be swapped with gochujang paste, chili paste, or other hot sauce;
- Green onions.
You can also add some sesame oil, soy sauce, white pepper, and any other Asian condiments you would like.
To make these spicy salmon hand rolls, you will need spicy salmon, veggies, sushi rice, and nori sheets.
I always make my sushi rice according to this guide. It has never let me down.
For the veggies, I chose some carrots cut with a spiralizer, cucumber ribbons, edamame beans and radishes. These radishes had a real kick to them. It is so wonderful to eat seasonal veggies when they are the best.
How to make temaki sushi hand roll?
The folding is pretty simple. The rice is added to one corner of the rectangular nori sheet. Then the toppings are added as well. Then it is simply rolled into a one and closed with a slightly wettened corner.
I would advise you to not wet the whole nori sheet, as some would do when making simple homemade sushi. Just the corner or max 2 cm from the edge.
A temaki roll is a simple and fun lunch idea. It is also great for entertaining. Sushi making itself is fun to do in a group, as a part of the party. I usually like to do it for a girl’s party, or my name’s day. But, once you put a nice movie in front of yourself and maybe a glass of wine, it becomes even better.
For a fun topping, I added some black sesame seeds and sunflower sprouts. But that is totally optional. Cilantro would also work really well and white sesame too. Thai basil is a nice addition and soft buttery summer lettuce on top of the rice under the salmon is nice too. Feel free to play when making temaki spicy salmon hand rolls. Spicy salmon hand rolls
Ingredients
Spicy salmon
- 400-500 g salmon fillet
- 1 tsp sriracha
- 2 tbsp mayo
- 2 green onions thinly sliced
You will also need
- Nori / sushi leaves
- Sushi grade rice
- Cucumber ribbons
- Thinly sliced or spiralized carrot
- Thinly sliced radishes
- Edamame beans
Instructions
- First of all, prepare all your toppings and additions, start by making the sushi rice, because that needs to cool
- To make the spicy salmon, cube a salmon fillet
- Mix with sriracha, mayonnaise, and sliced green onions
- You can make it as spicy as you want, this is pretty mild
- Next, you will have to cut your nori sheets in half
- Place the rice on one side of the sheet, about 2-3 tablespoons
- Then add your toppings, either all of them or mix and match for each hand roll
- Then wet the furthest corner
- Roll it shut like a cone
- Voila, you are done
